I. LOVE. DENVER.
We happened to go last year during Super Bowl weekend when the Broncos played the Seahawks. The town was painted orange and blue but what I loved the most was the white wonderland of snow.
Stay:
- Armstrong Hotel. This is actually in Fort Collins but if you are going to Denver, you must stay in Fort Collins a couple nights too! This hotel is super cute and in a great location. During the summer they have complimentary bike rentals for hotel guests to do the brewery tours on!
- Eat at Ace Gillett’s. Their underground lounge with good drinks and live entertainment. Felt like we stepped into the 20s down there. Since it was snowing, you’d go out on the streets and it’s like a ghost town. But underground, people are raging.

- New Belgium Brewing Company. Book a tour! The tour is a must! Tours book up immediately after they are posted online – I think 6 weeks in advance so make sure to plan ahead.

In Denver, eat at Sassafras American Eatery
It was so good – we ate here twice in one weekend! Go to the Jefferson Park location. Really amazing food using all local ingredients and everything made in house (including all of their hot sauces, jams and condiments. Adorable interior and exterior design. Friendly staff. Did I mention really good food?
Lastly, the Red Rocks Amphitheatre. Along with The Gorge, this is one of my favorites venues in the whole wide world. We went for the Icelantic Winter on the Rocks show. The only show that they have there during the winter. Ghostland Observatory and Jurassic 5 were performing. The best part about this outdoor concert in the snow was during the crazy, mind blowing light shows – the lasers would reflect on the falling snow flakes which looked like a firework show of sprinkles blanketing the night sky. It was ridiculous.
